As head chef of this fine-dining establishment, with experience in a three-Michelin-starred Paris kitchen, it’s no surprise that his culinary spark at French-cum-modern Marque has earned him three hats and an SMH Restaurant of the Year 2011 accolade. We’re jumping on the praise bandwagon. In these restaurant walls, all eyes – and mouths – are prey to mesmeric dishes such as rosewood squab with boudin noir, pickled corella pear and rhubarb.
