Australia’s first 25hours Hotel has appointed Chef Mitch Orr as Executive Chef, in the heart of Paddington’s vibrant Oxford Street Village Centre.

The 25hours Hotel The Olympia is located within the heritage-listed former West Olympia Theatre at 1-11 Oxford Street Paddington.

The hotel will also see 109 “luxurious guest rooms, a break-taking rooftop bar, a serene central courtyard, eclectic restaurants and cafes, live music facilities, a wellness offering and ground floor retail”.

The development team aims to delve into the history of the arthouse cinema and pay tribute to the rebels and dreamers who shaped its story.

“By celebrating their narrative, the hotel will provide a unique and memorable experience for its guests,” builder-developer of 25hours Hotel The Olympic Central Element writes.

About Chef Mitch Orr

Orr rose to prominence after winning the 2010 Josephine Pignolet Young Chef of the Year Award while working at the acclaimed Sepia.

He went on to train at Italy’s renowned Osteria Francescana before returning to Sydney to launch his own restaurant, ACME, in 2015. Known for its bold pan-Asian–Italian fusion, ACME quickly gained critical acclaim, earning Time Out’s Restaurant of the Year and maintaining a one-hat rating throughout its four-year run.

In 2022, Orr became chef partner at Kiln at the Ace Hotel Sydney, which was awarded one hat and named Best New Restaurant in the 2023 Good Food Guide Awards.

Now, Orr has joined 25hours Hotel The Olympic as their executive chef.

Orr told Broadsheet he was excited for Australia’s first 25hours Hotel to open.

“It’s exciting. It’s always fun to do openings, especially with companies [where] it’s their first time in Australia. It’s good to be a part of that and be able to help them fit into the Sydney landscape, and have that influence to help guide them to become a part of the local community,” Orr said.

The chef will lead the indoor-outdoor rooftop dining space at Monica inside Sydney’s first 25hours Hotel.

“It’ll be snack-heavy. West Hollywood, California is the brief, but that doesn’t really mean anything other than working with small producers, being seasonal, light and fresh flavours – which is all of my food anyway. So I think that’s a really good, natural fit,” Orr told Broadsheet

25Hours Paddington: A ‘Strategic Location’

JLL Managing Director Gus Moors described 25hours Sydney as a “strategic location” that could not be “overstated”.

“Situated at the gateway between the affluent Eastern Suburbs and Sydney CBD, the property draws from a host of major demand drivers including the vibrant Oxford Street nightlife precinct, Allianz Stadium and Sydney Cricket Ground (SCG), St Vincent’s Hospital, Disney and Fox Studios Australia. This ensures a steady flow of guests and patrons,” Moors told The Hotel Conversation.

The 25hours Sydney hotel will feature four different dining venues: Jacob the Angel (bakery), The Palomar Restaurant, The Mulwray (cocktail and wine bar) and a rooftop bar called Monica.

25hours Sydney The Olympia is set to open in late July or August this year.
