It is fast becoming the new Sydney cliché – if you want good Vietnamese, travel to Cabramatta. However, being brutally honest, pho is most needed when hungover, and I’m not dealing with City Rail through one bloodshot eye.  All of which points to the need for a pho location close to home. Good pho is all about the broth, and the broth is best at PHD Vietnamese Restaurant. The richly flavoursome broth of PHD is all about beautiful balance, rich but not heavy. Intense beef richness is balanced by aromatic ginger, cinnamon and star anise. All the usual sides, Thai basil, lemon, bean sprouts and a celebration of different chillies, complete the best pho close to home. (Adrian March)
