Friday night and we’re perched on stools at the black bar, though many are lounging, as you do, in the plush comfort of Gilt. Friday night in the CBD means suits swanning about the mezzanine gallery. Luckily we’ve frocked up; this is an elegant bar with elegant cocktails and a superb list that has recently been extended. Gilt offers signature, vintage and modern classic cocktails. They’re all smooth as silk with a balance that declares they know how to mix. Here, my favourite Sazerac uses the namesake rye, house barrel-aged. Yes please. Vintage: we agree, bring back the vol-au-vent and wash it down with a Brandy Crusta. (Yes the bar food is good here too.) The modern classics include the famous Penicillin.
