

The highly anticipated Hay St Market at Paddy’s Market has opened its doors in Sydney’s Chinatown.
The doors opened for the first time on 26 March, but Prime Minister Anthony Albanese officially opened the newly transformed beloved Sydney icon this morning (9 April) alongside NSW Premier Chris Minns, NSW Opposition Leader Mark Speakman and Sydney Lord Mayor Clover Moore.
The transformation has been three years in the making and spans over 3,000 square metres of Paddy’s Markets. It is also home to over 48 traders, offering over 25 different cuisines.
This multi-million dollar transformation is set to revitalise the Haymarket precinct, increase tourism to Haymarket, and create more than 300 jobs.

Hay St Market focuses on making the market a unique global culinary experience. World-renowned chefs such as Luke Nguyen, celebrated chef, restaurateur, author and TV presenter; and Mark Olive, Australian Indigenous chef, TV personality, and restaurateur; are bringing their culinary visions to life within Hay St Market.
Nguyen is bringing family secrets to Pho Chu Lap where visitors can taste its famous 24-hour pho broth. He is also the mastermind behind Luke Luk Dumplings and Madam Banh Mi.
Mark Olive’s Little Midden will give visitors a taste of Australian Indigenous flavours, with a seafood-based repertoire featuring his famous Smoked Blue Gum Barramundi and Bell Pepper skewers.
Also joining the market’s lineup are Tim Casey, Christina Murphy, and Frank Canturi, who will each be bringing their own talents and experiences.

Hay St Market won’t only still feature the stalls and fresh produce of Paddy’s Markets but also integrate it with the new food experience as well as Market City’s entertainment precinct.
