The food by renowned modern Italian chef Danny Russo does not miss a beat. Slurp up briny virgin Coffin Bay Oysters ($3.50/each) then dip into the perfection of the wagyu Lingua Tonata with yellow fin tuna, capers and anchovies ($19). Prepare yourself for a sublime moment with the pan-fried veal sweetbreads with sanguinaccio, Southern Highlands’ hazelnuts and peas ($19). The blood sausage, cooked on the premises the Italian way, with marsala, lardons and chocolate, is the best I have ever tasted. You wouldn’t go wrong with a plate of jet black Squid Ink Tortellini ($26) stuffed with flavoursome crabmeat, either. Nor should you miss the shaved baby Brussels sprout salad with walnuts, pecorino and lemon ($8). The wine list is seventy five percent Italian, and a real corker! Don’t be afraid to ask for help. Excellent house wine including Mudgee great, the 2007 Di Lusso Rose ($8/glass, $35/bottle) makes it possible to drink widely without breaking the bank. For a shade of things to come, tinkle into the toilets to check out the unisex washing station, complete with orgasmic air-drying technology.
