Through an unmarked door was revealed the type of tavern I have imagined in the world of my fantasy games. It has taken 9 months since completion to get that door opened, and now owner Kim McDiarmid is a happy man. Thankfully, he’s put only a small dent in the Irish whiskey collection whilst waiting for approvals – especially as a number of those whiskeys are not available elsewhere in Australia. Drink it neat or try their shots: Bushmills Black Bush Irish Whiskey with Stone’s Original Green Ginger Wine – excellent stuff. We only sampled a couple of cocktails: slam a Snake Bite Reviver ($16) – cider and Guinness with apple-blackcurrant foam – from a tankard. It’s terrific. We are awaiting foot-stomping music in the upstairs bar with much anticipation – BAR FLY will be back!

Sydney’s month-long bar odyssey wrapped up during the week with a huge VIP media and celebrity party at The Lawn, Ivy. It was to thank everyone involved and celebrate the funds raised for the Animal Welfare League NSW. And of course we were there – dogs and all. Even the fact that the BAR FLY got locked in the Ivy unisex toilets and had to bang her way out (with help) didn’t dampen the spirit of the night. (Too much celebrating with too many cocktails I hear you say?) Hugs and congratulations to the 60 bars that mixed special cocktails throughout March, including Bondi Hardware, Palmer and Co, Gazebo Wine Garden and Ananas Bar & Brasserie. “Parched March helps raise money for Animal Welfare League NSW (AWL) by encouraging people to enjoy our city’s bars responsibly. It proves that doing good doesn’t always mean depriving yourself,” said Parched March Director Amy Cooper.
